Proper paella is about patience and the pan: a deep sofrito, good stock, the right rice, and the discipline to leave it alone until the socarrat forms. Cook the whole thing along with us, live from your own kitchen.

What we will make
The sofrito base
Slow-cooked onion, garlic, tomato and paprika, the flavour engine underneath every good paella.
Rice and stock
Why short-grain rice matters, how much stock to use, and why you never stir once the rice goes in.
Building your paella
Layering seafood or chicken so everything lands cooked at the same moment.
The socarrat
The prized crust on the base of the pan, how to hear it, smell it and get it right without burning it.
How the class works
- Live on Zoom on a Wednesday night, 6:30pm Adelaide time, about two hours from our kitchen to yours.
- One $59 ticket covers your whole household, cooking together on one screen.
- Your ingredient and equipment list arrives the moment you book, with easy substitutions.
- Ask questions as you cook, camera on or off, whatever you are comfortable with.
- The matching self-paced class lands in your library afterwards, yours to re-watch any time.
