Ingredients
  

Caramel Custard Base:

  • 1 cup full cream
  • 1 cup full cream milk
  • 1 1/4 cups caster sugar
  • 1 tsp vanilla extract
  • 3 egg yolks whisked

Peanut Caramel Sauce:

  • 1 1/4 cups caster sugar
  • 1/4 cup full cream
  • 1/2 tsp sea salt
  • 1 tbsp peanut butter
  • 1 tsp vanilla extract

Instructions
 

Peanut Caramel Sauce:

  • In a saucepan over medium heat, add the caster sugar. Shake the pan occasionally until the sugar dissolves and turns into a light caramel color, about 5-7 minutes.
  • Carefully add the full cream, peanut butter, vanilla extract, and sea salt to the caramel, stirring continuously until smooth and well combined.
  • Remove the caramel sauce from heat and set it aside to cool.

Custard Base:

  • In a saucepan, combine the full cream, full cream milk, and caster sugar. Warm the mixture over low heat, stirring constantly, until it reaches a low simmer. Do not boil.
  • Remove from heat and stir in the vanilla extract.
  • Gently add the whisked egg yolks to the warm milk mixture, whisking continuously.
  • Return the mixture to the saucepan and cook over low heat, stirring constantly, until it thickens and coats the back of a spoon, about 5-7 minutes. Do not boil.
  • Remove the custard base from heat and allow it to cool.
  • Combining Caramel and Custard:
  • Once both the peanut caramel sauce and custard base have cooled, gently combine them in a clean bowl.
  • Ice Cream Assembly:
  • Pour the combined mixture into an ice cream maker and churn according to the manufacturer's instructions, usually about 20-25 minutes or until it reaches a soft-serve consistency.
  • Transfer the churned ice cream to an airtight container.
  • Drizzle extra peanut caramel sauce over the ice cream.
  • Freeze the ice cream for at least 4 hours or until it's firm.
